Fig Bars


  • 2 cups (350g) chopped figs
  • ¾ cup apple juice
  • 155g butter
  • ¼ cup brown sugar
  • 1 cup wholemeal plain flour
  • 1 cup rolled oats
  • ¼ cup chopped pecan nuts

 

      Grease 19cm x 29cm lamington pan, line with paper, grease paper. Combine figs and juice in medium saucepan, bring to boil, reduce heat, cover, simmer for about 5 minutes or until figs are tender; cool.

       

Beat butter and sugar in small bowl with electric mixer until light and fluffy, stir in fig mixture. Add sifted flour, oats and nuts; mix well. Spread mixture into prepared pan. Bake in moderate oven for about 40 minutes or until golden brown, cool in pan.

 

May be made up to 3 days ahead. Keep covered in refrigerator. Unsuitable for microwave.
